What if the very gas created naturally during fermentation could be captured, purified, and reused right inside our brewery? Through our installation of DALUM’s CO2 Recovery System, we’ve taken another big step in scaling our sustainability efforts: bringing circular manufacturing to our brewing operations at Pure Project Vista. By recapturing and reusing the carbon dioxide naturally produced during the fermentation process, we cut down our environmental footprint while continuing to craft the delicious, flavorful beer you love.

To celebrate this sustainability milestone, we’re releasing Closed Loops, a murky IPA brewed with our local friends at Societe Brewing Co., who have also recently installed DALUM’s CO2 recapture equipment at their own brewing facility!

 

THE IMPORTANCE OF CO2 IN BREWING

During the brewing fermentation process, yeast creates two byproducts: alcohol and CO2. While the alcohol stays in the beer, the CO2 is typically released into the air. Breweries also use CO2 to carbonate beer, pressurize draft systems, and remove oxygen during the brewing and cellaring process. However, due to the high cost and large amount of equipment to recapture CO2 in the past, breweries have historically relied on receiving CO2 deliveries in tanks for all of these functions. DALUM has developed a new, smaller, more cost-effective system to capture and circulate.

Based in Denmark, DALUM Beverage Equipment designed a micro-CO2 recovery system specifically tailored for brewing and fermentation. Winslow, our Co-founder and Brewer, began spearheading our project in January 2025, and by February 2026, our DALUM system was fully operational at Pure Project Vista. In the first six months of installation, we’ve already recaptured about 70,000 lbs of CO2, and are on track to recapture over 119,000 pounds of CO2 by the end of 2026.

 

 

 

WHY RECAPTURING MATTERS

Brewing beer is inherently resource-intensive, but using beer as a force for good means constantly looking for opportunities to do better. CO2 is a major greenhouse gas contributing to global climate change, released into the atmosphere if not recaptured from fermentation. By not purchasing it from outside sources, we’re also able to cut down on the environmental impact of transportation. The CO2 we’re now using to carbonate our beer comes directly from the source, rather than from the alternative. A win for your palate and the planet!

 

CLOSING LOOPS TOGETHER

 

Closed Loops canAt 6.9% ABV, Closed Loops is a Murky IPA with Tropical Fusion, Mosaic, and Strata Cryo hops. It opens up with aromas of tangerine, ripe raspberry, and juicy pineapple. Each sip offers notes of cherry, gooseberries, and lemongrass, finishing with a delightful dankness.

Closed Loops is our new collaboration beer with DALUM and Societe Brewing Co. to celebrate this technology and the advancements in brewing. Available starting 9/3/26 at all Pure Project taprooms and select retail locations, this beer helps showcase the importance of CO2 recapture, one pint at a time.
