Batch 7 of our legendary bourbon barrel-aged imperial stout and a 16-month oak-aged strawberry sour just landed in taprooms! This week`s bottle drop is a celebration of barrel-aged craftsmanship and local San Diego agriculture.
CORYLUS (BATCH 7) 🌰
Bourbon Barrel-Aged Imperial Stout with Hazelnuts, Cacao, & Coffee
12.3% ABV | Limited Release
Corylus is our luxurious bourbon barrel-aged imperial stout infused with a trio of adjuncts that make it an unforgettable Pure classic. The seventh batch of this velvety, full-bodied brew rested in Cutwater, Heaven Hill, and Barton 1792 bourbon barrels for 18 months, establishing a unique complexity. Organic toasted hazelnuts, organic Peruvian cacao, and Brazilian coffee enhance the sipping experience, forming decadent flavors of dark chocolate fudge, hazelnut gelato, and inky espresso that leave a lasting impression on the palate.
SERENE BEING 🍓
Oak Barrel-Aged Sour Ale with Strawberries & Elderflower
5.0% ABV | Limited Release
Find your center with Serene Being, our delightful new 5.0% ABV mixed fermentation sour ale. This base beer was brewed with Admiral Pilsner malt and farm-direct CA unmalted wheat. It then aged in oak for 16 months before receiving a heaping 1,000 pounds of fresh, local strawberries from JR Organics and 10 pounds of local, organic elderflower from Coastal Roots. Pouring a beautiful sunset orange color, it offers a vibrant nose of strawberry compote, apricot, and elderflower. Each sip provides juicy, tart notes of mandarin oranges, herbal tea, and orange blossom, serving as a delightful homage to San Diego organic agriculture.

Murky IPA with Tropical Fusion, Mosaic, & Strata Cryo
6.9% ABV | Limited Release
Rooted in sustainable brewing innovation, Closed Loops is a collaboration with Societe Brewing showcasing the power of @dalum_beverage_equipment`s CO₂ recapture equipment, newly installed at both breweries. This murky IPA clocks in at 6.9% ABV and offers notes of tangerine, cherry, & lemongrass. By recycling CO2 released during fermentation to carbonate this Tropical Fusion, Mosaic, & Strata Cryo hop-bomb, our closed-loop system slashes emissions at the source. A win for your palate and the planet!
ROW OF PALMS 🌴
West Coast Double IPA with Mosaic, Citra, & Simcoe
8.5% ABV | Limited Release
Row of Palms is here to elevate your West Coast IPA experience. This 8.5% ABV double IPA opens up with aromas of ripe strawberry, nectarine, and pine resin, while each sip provides refreshing flavors of pineapple juice, orange zest, and grapefruit pith. Medium-bodied with a pleasantly lingering bitterness, Row of Palms offers a clean, resinous finish that leaves you reaching for another sip.

In February, we took a major step in our commitment to environmental stewardship with the installation of a new CO₂ recapture system from Dalum Beverage Equipment, a Denmark-based pioneer in craft-scale carbon recovery technology. ⚗️🫧
The state-of-the-art equipment allows us to capture biogenic CO₂ produced naturally during fermentation, which is then cleaned, condensed, and reused on-site for tank purging and carbonation. 🍺
Since installing the equipment, we have recaptured and reused over 74,500 lbs of CO₂ gas, which would have otherwise been released into the atmosphere. ♻️ To put this impact in perspective, the reduction is equivalent to the emissions from burning nearly 3,850 gallons of gasoline.
To celebrate this sustainability milestone, we have teamed up with @societebrewing and @dalum_beverage_equipment to brew Closed Loops, a collaborative murky IPA brewed with recaptured CO₂. 🤝
This epic release lands in Pure Project taprooms this Thursday, September 3rd!
