Lief, our Méthode Traditionnelle (M.T. III), is a blend of one-, two-, and three-year-old spontaneously fermented ales inspired by the Belgian process of making traditional lambic. California-grown pilsner malt and unmalted wheat create the foundation of this blend, which was inoculated solely by wild yeast and microorganisms indigenous to the Miramar area, then aged in neutral oak barrels. Batch #8 showcases vibrant carbonation, bright acidity, and an elegant balance of funk, white grape, and ripe apricot.
