Lief, our Méthode Traditionnelle (M.T. III), is a blend of one-, two-, and three-year-old spontaneously fermented ales inspired by the Belgian process of making traditional lambic. California-grown pilsner malt and unmalted wheat create the foundation of this blend, which was inoculated solely by wild yeast and microorganisms indigenous to the Miramar area. Batch #7 showcases vibrant carbonation and an elegant balance of funk, bright lemon, and ripe apricot.
