Filipino Celebration Pastry & Beer Pairing

Pure Project has joined forces with Chef Justin Gaspar to bring you a mouthwatering pastry and beer pairing!

Highly acclaimed Chef Justin Gaspar brings together classic French training while celebrating his Filipino heritage in these three specialty-made pastries paired with three Pure Project beers. This one-of-a-kind culinary experience will have you saying “ang sarap”! (“It’s delicious” in Tagalog)

Join us at any of our taprooms on Sunday, October 1st to indulge in this decadent pairing.

Menu:

Pastry: White Chocolate Macadamia Shortbread Cookie w/ Maldon Sea Salt
Beer: Tropical Mist – Citrus Blonde Ale (5.1% ABV)

Instantly be transported to swaying palm tree beaches. Buttery but delicately sweet, the shortbread cookie enhances the vanilla-like malt flavors of Tropical Mist. The subtly sweet and bright citrus notes of local, organic Valencia oranges harmonize beautifully with the toasty macadamia nuts and white chocolate. Lastly, the finishing salt makes the sweet citrus pop and balances the pairing perfectly, making neither the beer nor the cookie too sweet.

 

Pastry: Coconut and Calamansi Kouign Amann w/ Toasted Coconut & Calamansi Curd
Beer: Lotus Sunset – Mango & Guava Smoothie-Style Ale (6% ABV)

This pairing is a match made in tropical paradise. Initially greeted with luscious organic mango and guava from Lotus Sunset, the pairing is complemented by toasted coconut with the lively calamansi citrus that brightens up the stage. The kouign amann—a pastry that is a true labor of love—has a signature flaky and pleasantly crisp texture that contrasts the silkiness of the curd filling and intensely fruited beer. A pairing well worth all the effort!

 

Pastry: Bibingka & Espresso-Whipped-Ganache-Filled Croissant
Beer: Uncovered Roots – Imperial Purple Stout with Ube, Coconut, Cacao, and Coffee (9% ABV)

Quite possibly the perfect pinoy pairing. Inspired by cherished Filipino desserts, Uncovered Roots features the eye-catching ube as the star of this “breakfast in one bite” experience. Organic toasted coconut from the Philippines in Uncovered Roots finds flavor bridges with the bibingka (coconut rice cake) filling to uplift the nutty, vanilla-like flavors of the purple root. A velvety chocolate-covered espresso bean ganache adds punchy coffee intensity to balance out the chocolate wafer-like backbone of the beer. A masterclass of balancing bitter and sweet. Masaráp (“delicious” in Tagalog)!
