Bottle Release: Resplendent Quetzal & Tao

It’s almost our seventh anniversary, and what better way to celebrate than with the release of a new barrel-aged beer. For such the occasion, we’ve created Resplendent Quetzal, a velvety, pecan pie-inspired bourbon barrel-aged imperial stout. Plus, the third batch of our fan-favorite beer-wine hybrid brew, Tao, is here!

The bottles will be released on Thursday, January 5th at all five taproom locations as well as for California shipping. Check out all the details below.

 

BEER DETAILS

RESPLENDENT QUETZAL

Bourbon Barrel-Aged Imperial Stout with Pecans & Vanilla
14.1% ABV

For our seventh anniversary, we wanted to brew up something extra special. Resplendent Quetzal is an ode to our roots in Costa Rica, and named after a bird whose striking iridescent colors bring even more beauty to the country’s tropical flora. This pecan pie-inspired bourbon barrel-aged stout features a blend of two different bourbon barrels—Breckenridge and Widow Jane—plus the tasteful addition of organic Vanuatu vanilla bean and organic pecans. Scents of candied pecans, brown sugar cinnamon cookie, and fig delight the nose, while flavors of crushed pecans, chocolate mousse, and bourbon are close behind to please the palate. As breathtaking as seeing a resplendent quetzal in the wild, we hope sipping this stout provides you with an unforgettable experience of your own.

TAO

Oak Barrel-Aged Sour Ale with Cabernet Sauvignon & Cabernet Franc Grapes

7.1% ABV

Tao is our unique sour ale built on the pomace of organic cabernet sauvignon and cabernet franc grapes. These grapes are grown in a wild, remote, biodynamic vineyard atop Napa’s Howell Mountain, Black Sears; they have been described as “containing the entire diversity of the forest.” Fermented solely on the pre-existing yeast on the skins from the wine fermentation, we then pressed the skins and aged the beer for a year in Bordeaux wine barrels. This third batch of our beer-wine hybrid contains notes of dark cherry, pomegranate, and oak, with a bright acidity and dry finish. From the barrel-aged and sour ale lover to the wine enthusiast, Tao is for you.

TAPROOM RELEASE DETAILS

The bottles will be available for purchase online starting at 9am on Thursday, January 5th, and available for pickup at all five taproom locations when doors open at 12pm.

If you would like to place an order online for pickup, please place your order for the taproom location where you plan to pickup from (Carlsbad, Vista, Miramar, Balboa Park, or North Park).

  • Your order is not complete until you check out (no orders are held in shopping cart).
  • At time of purchase you can select your pickup day: same day, next day, or two days out. You must pick up on your selected day and time.
  • If you would like to designate someone else to pickup your order, please place your online order under their name. The name of the person picking up needs to match the name on the order.

 

SHIPPING RELEASE DETAILS

A limited amount of bottles will be released online for California shipping. They will be sold on a first-come-first-served basis starting at 9am on Thursday, January 5th. Orders placed before noon will ship overnight for Friday delivery.
