Introducing our first-ever coffee and vanilla bourbon barrel-aged imperial stout, Mystic Matter. Plus, this year’s batch of Madeline, our oak barrel-aged mixed fermentation Saison staple, is here and delicious as ever.
The bottles will be released on Thursday, October 13th at all five taproom locations as well as for California shipping. Check out all the details below.
Bourbon Barrel-Aged Imperial Stout with Coffee & Vanilla
Introducing our first-ever coffee and vanilla barrel-aged imperial stout, Mystic Matter. As the name implies, its jet-black appearance intrigues the mind to discover what lies beyond: a complex brew that’s perfect for bourbon and coffee lovers alike. Its vast depth of character was developed from resting in multiple Breckenridge bourbon barrels for up to 15 months, plus the harmonious addition of organic Tahitian vanilla bean and Três Barras coffee from our friends at Steady State. Beyond its heavenly aromas of tiramisu, charred oak, and vanilla macaroon, you’ll find flavors of bourbon, fudge, and brown sugar revealed with each delectable sip.

Oak Barrel-Aged Mixed Fermentation Saison
We’re proud to present our seventh batch of Madeline, one of the very first beers we brewed at Pure Project. Inspired by the rustic farmhouse saisons of Belgium, Madeline is a blend of mixed fermentation saisons aged in pinot noir French oak barrels. We started with one base beer, separated it to barrel-age with three different mixed cultures, and then blended these three beers back into the final product. One of the cultures we use is a native California wild yeast, domesticated from unpasteurized apple juice from Northern California. The cultures in Madeline have changed a bit over time, but they ultimately produce a light, effervescent brew with classic essences of farmhouse funk and tartness over a beautiful background of oak.

The bottles will be available for purchase online starting at 9am on Thursday, October 13th, and available for pickup at all five taproom locations when doors open at 12pm.
If you would like to place an order online for pickup, please place your order for the taproom location where you plan to pickup from (Carlsbad, Vista, Miramar, Balboa Park, or North Park).
A limited amount of bottles will be released online for California shipping. They will be sold on a first-come-first-served basis starting at 9am on Thursday, October 13th. Orders placed before noon will ship overnight for Friday delivery.
