Bottle Release: Eternal Forever & Tao

In celebration of our 6th anniversary, we’re excited to release a special blend of single and double bourbon barrel-aged stouts with cacao and wild Thai banana! Also making its second annual return is our collaboration with Black Sears Winery—an oak barrel-aged sour ale with Cabernet Sauvignon and Cabernet Franc grapes.

The bottles will be released on Thursday, January 20th at all four taproom locations as well as for California shipping. Check out all the details below.

ETERNAL FOREVER

A Blend of Single and Double Bourbon Barrel-Aged Stouts with Cacao & Wild Thai Banana
13% ABV

In celebration of our 6th anniversary we present Eternal Forever, a blend of single and double bourbon barrel-aged stouts—aged in five bourbon barrels! We added organic Ghanaian cacao and wild Thai bananas—picked wild in Thailand when almost overripe and dried immediately to retain their sweet flavor. The result is a velvety and full-bodied brew brimming with flavors of bananas foster, fudge, marshmallow, dark red fruit and toasted oak…flavors that you’ll want to savor long after the last sip. Cheers to six years!

Oak Barrel-Aged Sour Ale with Cabernet Sauvignon & Cabernet Franc Grapes

7.9% ABV

Tao is a unique sour ale, a beer-wine hybrid built on organic cabernet sauvignon and cabernet franc grapes and aged in oak barrels. These grapes come from a wild, remote, biodynamic vineyard atop Napa’s Howell Mountain, Black Sears; they have been described as “containing the entire diversity of the forest.” During the 2020 harvest, Black Sears shared a literal ton of their spent grape skins with us. Their wine went into barrels, and we brewed a beer onto the grape skins. Fermented solely on the pre-existing yeast on the skins from the wine fermentation, we then pressed the skins and aged the beer for a year in Bordeaux wine barrels before bottle conditioning the beer with our house strain of Brettanomyces. The result is a naturally effervescent, rosé-like hybrid. Blush pink in color with a white head. Expect this ale to deliver essences of strawberry, dark cherry, and red wine, together with pronounced minerality and subtle notes of French oak. We love the way these grapes, so unique to that rugged and biologically diverse mountaintop terroir where they grow, shine in this special collaboration that will simultaneously satisfy your cravings for both beer and wine.

TAPROOM RELEASE DETAILS

The bottles will be released at all four taproom locations on Thursday, January 20th. They will be released online at 9am, and they will be available for pickup at all four taproom locations when our taprooms open at 12pm (Miramar, Balboa Park, and Carlsbad) and 3pm (Vista). In other words, you can purchase online OR in person, but please note the bottles will be sold on a first-come-first-served basis starting with the online orders at 9am.

If you would like to order and pay online for pickup, please place your order at the location where you plan to pickup.

  • Your order is not complete until you check out (no orders are held in shopping cart).
  • At time of purchase you can select your pickup day: same day, next day, or two days out. You must pick up on your selected day and time.
  • If you would like to designate someone else to pickup your order, please place your online order under their name. The name of the person picking up needs to match the name on the order.
