Bottle Release: Dualité & Tao

For our next bottle release, we introduce two special new collaborations!

First up is a Rye Whiskey Barrel Aged Imperial Stout collab with our friends at WeldWerks Brewing, and second is a Sour Ale aged in Oak barrels with Cabernet Sauvignon and Cabernet Franc grapes from Black Sears Wine.

Please note:
The entire bottle sale will take place online via Eventbrite. There will be a specific sale window as well as a designated pickup window at our Miramar tap room ONLY.

RELEASE DETAILS:

ON SALE: The bottles will be released online on Thursday, January 7th at 9am PST. They will remain on sale until January 10th at 11:59pm PST, OR when bottles sell out.

Please be aware that demand for this product exceeds availability. If the bottle says “unavailable” then all available bottles are currently in carts to be purchased.

If any carts are dropped or purchases not completed, the bottles will be added back into inventory and become available to purchase again on a first-to-initiate basis. If the bottle says “sold out” then all bottles have been purchased.

DUALITÉ

Rye Whiskey Barrel-Aged Imperial Stout with Chocolate & Vanilla
10.5% ABV

Like yin and yang, or a chocolate cookie filled with vanilla cream, we bring you a balanced but decadent imperial stout, ready for indulging. Aged in rye whiskey barrels with organic Ghanaian cocoa and organic Tahitian vanilla beans, this stout’s jet-black body gives way to aromas of whiskey-soaked lady fingers and fudge. Its flavors of brownie batter, toasted marshmallow, and dark molasses wash through with a velvety mouthfeel. Designed to embody the complementary and contrasting expressions of chocolate and vanilla, we hope you enjoy the beauty of this duality, or should we say, dualité.

TAO
*Collaboration with Black Sears Wine
Sour Ale Aged in Oak Barrels with Cabernet Sauvignon & Cabernet Franc Grapes
9.7% ABV
.
Tao is a unique sour ale, a beer-wine hybrid built on organic Black Sears grapes and aged in oak barrels. These cabernet sauvignon and cabernet franc grapes come from a wild, remote, biodynamic vineyard atop Napa’s Howell Mountain; they have been described as “containing the entire diversity of the forest.” During the 2019 harvest, Black Sears shared a literal ton of their spent grape skins with us. Their wine went into barrels, and we brewed a beer onto the grape skins. Fermented solely on the pre-existing yeast on the skins from the wine fermentation, we then pressed the skins and aged the beer for a year in Bordeaux wine barrels before bottle conditioning the beer with our house strain of Brettanomyces. The result? A naturally effervescent, rosé-like hybrid. Burgundy in color with a light pink head. Expect this ale to deliver essences of black cherry, plum, and cranberry, together with pronounced minerality and a fair amount of funk. We love the way these grapes, so unique to that rugged and biologically diverse mountaintop terroir where they grow, shine in this special collaboration that will simultaneously satisfy your cravings for both beer and wine.
