Breckenridge Bourbon Barrel-Aged Imperial Stout with Coconut, Maple Syrup & Mostra Coffee, 13% ABV (375ml bottle)
Chamber of Reflection is a bourbon barrel-aged imperial stout named for its flavor profile that reflects the bourbon characteristics from the Breckenridge bourbon barrel in which it aged. But that’s not all; the addition of organic Sri Lankan coconut, organic Vermont maple, and Mostra’s Ghost Bear espresso blend (direct trade Philippine coffee) emphasize and complement the bourbon character as well. Expect aromas of toasted oak, brown sugar and espresso to be followed by flavors evocative of a cinnamon coconut latte, french toast, and…more bourbon.
BOTTLE#2: ANGELIC HARMONIES, 2022
Oak Barrel-aged Spontaneous Beer with Blossom Bluff Peaches, 7.4% ABV (375ml bottle)
Inspired by the classic pêche lambics from Belgium, this wild ale was aged in a port barrel before being racked into a puncheon especially custom-fitted for the Cellar Cyndicate. The puncheon was topped off with a load of organic peaches from Blossom Bluff Orchards, a multi-generational family farm in the fertile San Joaquin Valley. With 6.6 pounds of peaches per gallon of beer, this ale is as golden in color as the fresh fruit it was brewed with. Its scents of ripe peach and funky minerality mingle with flavors of peach pie and oak tannins that will make even the angels sing.
