BOTTLE#1: THE TENTH NIGHT
Rum Barrel-Aged Imperial Stout with Coconut, 15.8% ABV (500ml bottle)
This extra-special stout underwent a 16-month aging process in 13-year-old Ballast Point Spirits rum barrels before being infused with organic toasted coconut from the Philippines. With each whiff, it captivates the senses with enticing aromas of German chocolate cake, rum, and baker’s chocolate. On the palate, flavors of rum, fudge, cardamom, and toasted coconut are accompanied by a decadent, full-bodied mouthfeel.
BOTTLE#2: LAST WORD
Chartreuse and Gin Barrel-Aged Sour with Cherries, 7.6% ABV (375ml bottle)
Last Word is inspired by the classic cocktail of the same name. This first-of-its-kind Pure Project creation rested for 16 months in a blend of Chartreuse barrels from the Grande Chartreuse Monastery in France and gin barrels from Old Harbor Distilling Co. here in San Diego. It then went on to re-ferment on organic dried Rainier cherries for two months. The chartreuse and gin barrel-aging imparted distinctive herb and botanical elements into this brew, making it well worth the wait.
